Delicious Banana & Walnut Bread


3 x Mashed Bananas (preferably overripe) 

2 x Eggs 

2 Tablespoons for yoghurt (coconut or Greek)

Bit less than 1/2 teaspoon of nutmeg (optional)

1 teaspoon Cinnamon 

3 teaspoons of Coconut Sugar (or raw brown sugar)

1/3 Cup of Maple Syrup 

2 teaspoons of baking powder 

2 Cups of Almond Meal (or flour of your choice, if you use plain l’d suggest 1 cup plain and 1 cup self raising) 


1/2 cup of Crushed Walnuts 

1/2 cup of Desiccated Coconut 

1/3 cup of Chia Seeds


  1. Mash Bananas in large mixing bowl

  2. Add the wet ingredients to the mixing  bowl (Eggs, maple syrup and yoghurt) and mix together 

  3. Add dry ingredients (nutmeg, cinnamon, almond meal/flour, coconut sugar, walnuts, coconut and chia seeds) 

  4. Mix thoroughly 

  5. Place into baking tray and cook on 180 until golden and cooked through
