Healthy Mexi Bowls (Vegan Option)

Ingredients:

  • 2 x Onions 

  • 1 x Garlic Cloves 

  • Half a handful of coriander (optional) 

  • 1 x Large Avocado 

  • 1 x Medium Sweet Potato 

  • 1 x Cauliflower 

  • Half a lemon 

  • 1 x Can Black Beans 

  • 1 x Can of Bean Mix or Kidney Beans 

  • 1 x Can of tomatoes 

  • Paprika 

  • Cumin 

  • Salt 

  • Pepper 

  • Parmesan Cheese (optional)

  • Feta / Vegan Feta (optional) 

  • Olive Oil (for frying)

Method:

  1. Place oven to 150-180 degrees, chop up sweet potato in chunks.

  2. Place sweet potato in a baking tray, season and add 1 x chopped onion. Sprinkle it through the chunks of sweet potato

  3. Add olive oil and a dash of soy sauce before placing in the oven until soft and crispy 

  4. Make your bean mix - following instructions below 

  5. Make Cauliflower Rice following instructions below 

  6. Make smashed avocado following instructions below 

  7. Once you have made steps 4,5 and 6 check the sweet potatoes. Once they are cooked add everything to a bowl starting with cauliflower rice as the base, then sweet potato, bean mix and avocado smash. Garish with some feta (optional) or cheese of your choice. For additional spice, add some dried chili flakes 

Bean Mix:

  • In a medium-size fry pan, heat some olive oil and then sauté onion and garlic and cook for 2-3 minutes. 

  • Add in paprika, cumin, oregano, salt and pepper (chill if you want it hot). Then cook for another minute or so 

  • Add the two cans of beans and stir 

  • Add can of tomatoes/ tomato purée 

  • Mix together and let simmer for 5-10 minutes 

Cauliflower Rice:

  • Chop cauliflower into chunks and put in medium-size saucepan with water and let boil until soft (use a fork to check the softness of cauliflower)

  • Once boiled, drain excess water and add a handful of grated Parmesan (optional, if you want to keep it vegan don’t add). You can also use cheddar cheese if you prefer the flavour 

  • Add salt and pepper to taste 

  • With a masher, mash the cauliflower and cheese together until you get a rice texture 

Avocado Smash:

  • Scoop avocado into a small bowl 

  • Add a small dash of Olive oil 

  • Squeeze in the juice from a lemon 

  • Add coriander (optional) 

  • Salt and pepper to taste 

  • Mash together with a fork to get a smooth consistency
